Ingredients

  • Grilled Chicken
  • 4 Fresh From The Farm Boneless, Skinless Chicken Breasts
  • Salt & pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • Greek Pasta Salad
  • 2 cups cooked penne pasta
  • 1 tablespoon of lemon juice
  • 1/4 cup red wine vinegar
  • 2/3 cup virgin olive oil
  • 2 cloves garlic
  • 2 teaspoons of dried oregano
  • 1 small red onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1/2 cup crumbled feta cheese

Directions

1Grilled Chicken

2Mix together all seasonings in mixing bowl.

3Add seasonings to both sides of the raw chicken breasts.

4Spray grill pan with cooking spray, and preheat on the stovetop over medium high heat for about one minute.

5Place the chicken breasts on the hot grill pan.

6Cook 6 minutes on each side or until done.

7Add onto the Greek Pasta Salad.

8Greek Pasta Salad

9Whisk together red wine vinegar, lemon juice, garlic, oregano, salt, pepper, and olive oil. Set aside.

10Combine pre-cooked pasta, onions, green and red peppers and feta cheese in a large bowl.

11Pour vinaigrette over the pasta and mix together.

To make sure your chicken is cooked through, look for an internal temperature reading of 82° C for a whole chicken and 74° C for ground poultry, chicken pieces & cuts.
