1 pkg (375 g) ULTIMATE Maple Chicken Breakfast Sausages
1 tsp (5 mL) olive oil
3 avocados, peeled, halved, pitted and chopped
3 tbsp (45 mL) freshly squeezed lime juice
1/2 tsp (2 mL) salt
6 bagels, split and toasted
1 1/2 cups (375 mL) packed arugula
1/3 cup (75 mL) crumbled goat cheese
2 tsp (10 mL) everything bagel seasoning
1Into heavy-bottomed skillet set over medium heat, add oil. Cook sausage, turning occasionally, for 8 to 10 minutes or until cooked through and internal temperature registers 165˚F (74°C).
2In medium bowl, using fork, mash avocado, lime juice and salt until smooth. Spread evenly over each toasted bagel half.
3Top each with arugula and sausage, dividing evenly. Sprinkle with goat cheese and everything bagel seasoning.
Substitute goat cheese with feta cheese if preferred.
