Ingredients

  • 1 pkg (375 g) Ultimate™ Maple Breakfast Chicken Sausage

  • 2 cups (500 mL) all-purpose flour

  • 2 tbsp (30 mL) granulated sugar

  • 1 tbsp (15 mL) baking powder

  • 1/2 tsp (2 mL) salt

  • 2 eggs

  • 1 1/2 cups (375 mL) 2% milk, at room temperature

  • 1/4 cup (60 mL) butter, melted

  • 1 cup (250 mL) shredded Cheddar cheese

  • 4 scallions, thinly sliced

  • 1/2 cup (125 mL) pure maple syrup

  • 1/4 cup (60 mL) sriracha hot sauce

Directions

1Preheat oven to 275˚F (140˚C).

2In large bowl, whisk together flour, sugar, baking powder and salt; set aside.

3In medium bowl, whisk together eggs and milk until blended. Whisk in butter. Stir egg mixture into flour mixture until just combined. Fold in cheese and scallions. Let batter rest for 10 to 15 minutes.

4Preheat waffle iron according to manufacturer’s instructions. Ladle 1 cup (250 mL) batter into waffle iron to cover about two-thirds of grid surface. Close the lid. Cook for 3 to 4 minutes or until steam stops emerging from waffle iron and waffles are golden brown and crisp. Keep warm on wire rack set over a baking sheet in oven.

5In small saucepan set over low heat, combine maple syrup and sriracha. Cook, stirring occasionally, for 5 to 7 minutes or until heated through and just starting to simmer.

6Meanwhile, preheat cast-iron skillet to medium-high heat. Grill sausages, turning, for 8 to 10 minutes or until cooked through and internal temperature reaches 165˚F (74°C).

7Top waffles with sausages and drizzle with spicy maple syrup

  • For loaded sausage waffles, garnish with drained pickled jalapeño pepper slices, avocado slices and a dollop of herbed cream cheese.
  • Use your favorite waffle mix if preferred.
  • Substitute sriracha hot sauce with your favorite hot sauce as desired.
