Paleo BBQ Chicken Bacon Tacos

Ingredients
- 1 pack Maple Lodge Farms Original Chicken Bacon®
- 1 pack Cherry Tomatoes
- 1 Red Onion, chopped large
- 2 Medium Zucchini, sliced
- 1 Pineapple, cubed
- 1 tbsp Olive Oil
- 1 Clove Garlic, minced
- ½ tbsp Chili Powder
- 1 tbsp Onion Powder
- Salt & Pepper to taste
- 2 Heads Boston, Romaine or Iceberg Lettuce
- Cilantro for topping
- 2 Avocados
- 2 tbsp Tomato
- 2 tbsp Red Onion
- ¼ cup Cilantro
- ½ Jalapeno pepper
- 1 Clove Garlic
- ½ Lime, Squeezed
- Salt & Pepper to taste

Directions
1Slice bacon in half, then add it to a mixing bowl with tomatoes, onion, zucchini and pineapple
2Stir in olive oil, garlic, chili powder, onion powder, salt and pepper until everything is fully coated
3Assemble vegetables and MLF Chicken Bacon onto skewers
4Place skewers on a preheated grill and cook for 3-5 minutes on each side until the vegetables are fully cooked through
5To make the guacamole, add all ingredients to a blender or food processor and blend until smooth
6To assemble the tacos, lay lettuce leaves flat on a plate for the wraps. Remove MLF chicken bacon and vegetables from the skewers and place them in the centre of each lettuce wrap
7Then top with guacamole and cilantro
Chef’s Tips
To make sure your chicken is cooked through, look for an internal temperature reading of 82° C for a whole chicken and 74° C for ground poultry, chicken pieces & cuts.
